This is such a wonderful dish to start your morning. You can either add fruit like blueberries or peaches to it and then bake or just bake it and add the fruit as a topping afterwards. My mom would make this a lot when I was a child and she would always put blueberries in it. Back then I was quite a picky eater and did not like the blueberries in it so I would pick them out. Today my tasted buds have changed and I do like blueberries and many other things that I didn't like then. I keep trying to decide whether this is a good thing or not. Because now that I like more things I also eat more things.....
1/2 cup oil
1 cup sugar
2 eggs
1 tsp salt
2 tsp baking powder
1 cup milk
3 cups oatmeal (you can use quick or old fashioned but I usually use quick)
Mix together eggs, sugar and oil till combined. Then add all other ingredients and stir till fully mixed together. Then pour into a deep dish pie pan or 8x8 square baking pan at 350 degrees for 30 minutes.
*I like to decrease the oatmeal to 2 1/2 cups because I like to have my oatmeal more custard like. This is also really good cold so make plenty and have
leftovers!
