Lime Peppered Chicken

Ok you all please listen up!!! If you all don't own a dutch oven in your kitchen you must go and get one now! Don't waste another minute run to the store and get one!! If you have to sell all other cookware you have to get one just do it. A great friend of mine gave me one as a Christmas present a couple years ago and within the last year I have truly realized the greatness of it. This next recipe I am about to share with you is one that my husband came up with and used the dutch oven to cook it. The flavors were amazing and the recipe was so simple.

I have learned that if you start with a good piece of meat weather chicken, pork, beef, or venison whatever you have you really don't need to overdo it with seasoning. I only purchase organic meat anymore and its not only because of health reasons but also flavor. You might say its more expensive but I say no.  Everything is so full of fillers anymore you actually have to eat more to even consume enough to feel full where if you eat pure meat  you will not need as much because you are filling up on the real stuff and your body will recognize it.

Ok onto the important part the recipe! This recipe is my husband's. I have a passion for cooking but so does my husband so you will not only be getting my food creations but his too!


Lime Peppered Chicken

Whole Chicken legs (leg with thigh attached)
1 lime juiced
2 TBS maple syrup
2 tsp balsamic vinegar
garlic salt
freshly ground tri colored peppercorns
sea salt, to taste

 Mix all together in bowl and let marinate for 30 minutes or more.


Then heat the dutch oven and add olive oil to it and brown chicken on all sides. You will only be able to do a couple at a time then place on a plate and cover as you continue to cook all the chicken. Once you browned all pieces place chicken back in dutch oven and cover and cook in oven at 375 for 45 minutes basting several times during cooking time.

I also made baked beans and cesar salad. We could not stop eating it! Side note as it cooks in pan it makes it own wonderful flavorful sauce!
