Lima Bean Crostini


1 -16 oz bag of frozen lima beans
1 TBS olive oil
1 TBS fresh mint, chopped
2 tsp fresh lemon juice
Salt & pepper to taste
24 crostini
Italian cheese blend

Cook lima beans until tender the transfer drained beans into a food processor. You can reserve some beans to the side for pretty garnishment at the end. add mint, lemon juice, salt & pepper and as you process the beans slowly drizzle in the oil till its all incorporated. Spread about 1 tsp of bean mixture onto each crostini then top with cheese and bake at 350 till cheese is melted. If you reserved some beans place one bean on top of each crostini.
