I was a very lucky girl who was able to grow up near my grandparents. I always looked forward to being able to go and visit them. I would actually fake being sick sometimes from school so she would come get me since she lived right down the road from school and I lived 25 minutes from school. (This is my first confession of this so mom so sorry to have lied all those years ago!)
My grandma Sommers loved food as much as I do now and loved sharing it with everyone. I believe part of my real passion was inspired by her. There was truly hardly a time I was there when there wasn't something yummy to eat in her kitchen. She also loved making sure that each and every person that walked through her door would eat something whether they were truly hungry or not! And if you were looking a little thin in her eyes she tried to give you double. My grandma was definitely one of a kind that I wish everyone would have been able to meet. I have so many wonderful memories of going to my grandparents house! As I sit here and type this my mind is flooded with memories and a few tears.
One memory that I have is her sitting me down at the kitchen table and having us look through cookbooks for a cookie recipe. She said I can pick out whatever recipe I want. So I sat there and we looked through a few until I came upon Ranger Cookies. Neither one of us have ever made them so I was very excited. After making them they became my favorite cookie and still is today. Every time I make them people also love them. There is one ingredient though I don't put in and that is coconut because when I was a child I didn't like it and I am still not a huge fan of it in my cookie today. I have though made them with coconut but still prefer without. I will let you all make the decision on whether to add or leave out. Enjoy!!
Ranger Cookies
1 cup butter, softened
1 cup sugar
1 cup brown sugar
2 eggs
1tsp vanilla
2 cups flour
1/2 tsp salt
1 tsp soda
1/2 tsp baking powder
1 cup coconut
2 cups Rice Krispies
2 cups dry oatmeal
Cream together shortening, eggs, sugar and vanilla. Beat well. Add flour, salt, soda, and baking powder. Mix well. Stir in coconut, rice krispies, and oatmeal. Bake at 350 degrees for about 10 min.
Makes about 4 dozen cookies. Usually a little less for me because I have a horrible habit of eating some of the raw cookie dough. Yes I know there is raw eggs but I can't resist!

Another cookie that I love and also reminds me of my grandma Sommers is sour cream cookies. She would usually add some colored sprinkles on top too. I am not really sure the exact recipe she used but I found one that is really good and does remind me of the ones she made.
Sour Cream Cookies
3 cups sugar
2 cups butter
4 eggs
2 cups sour cream
2 tsp vanilla
1/2 tsp salt
2 tsp soda
6 tsp baking powder
7 cups flour
Beat together sugar, butter, vanilla and eggs till light and fluffy. Sift together salt, soda, baking powder and flour in separate bowl. Gradually add sour cream and flour mixture alternately and mix well after each time. Chill dough for several hours before baking. Preheat oven to 400. Bake only 7 minutes in center rack in oven. You can put sprinkles on the cookies if you want before baking. Or if you want to make them a little sweeter after they bake make a glaze and and add a few sprinkles. Either way they are super yummy and moist.
Glaze:
1 1/2 cups powdered sugar
2 TBS butter, melted
3 TBS milk
